VEGETABLE LATKES

1 cup chopped onion
2 cloves garlic, crushed
1/4 cup chopped red bell pepper
1/4 cup chopped green pepper
1 1/2 cup grated carrots
1/4 cup chopped celery
1 10 oz. package of frozen spinach (or chopped broccoli)
3 Tbsp. light tasting olive oil
1/8 tsp. pepper
3 eggs, beaten
3/4 cup whole wheat matzo meal or finely ground rye cracker crumbs
1 1/2 tsp. sea salt
light tasting olive oil for frying

Sauté onion, garlic, red and green peppers, carrots and celery for 10 minutes.  Cook and drain spinach (or broccoli).  Combine all vegetables.  Add eggs and seasonings and mix well.  Add matzo meal and combine well.  Refrigerate for 15 minutes.  Form mixture into patties and fry in oil until browned on each side.
